Healthy Breakfast: Coconut Banana Oatmeal with Blueberries

I would have to say that I've been 'hot and cold' towards my breakfasts these days (haha. #failedpun), because I usually can't decide if I would rather have a warm bowl of oatmeal or a refreshing portion of acai bowl.
In any case, I like to experiment with both and came up with this recipe:

In any case, I like to experiment with both and came up with this recipe:
Ingredients (for 1 serving):
1. 1/3 cup of rolled oats
2. 1/2 cup of soy milk (or any liquid of your choice - options: almond milk, dairy milk, coconut milk)
3. 3 tablespoons of shredded coconut
4. 1 banana
5. handful of blueberries
6. optional: 1/2 tablespoon of maple syrup or honey
toppings: banana, blueberries, shredded coconut
Steps:
1. Pour rolled oats, soy milk, shredded coconut and half a banana (it'll be better if you sliced them up into smaller pieces first) into pot
2. Heat the ingredients up with medium heat, then let it simmer at low heat once it starts to boil for 5-10minutes
3. optional: put in a handful of blueberries in once it starts to simmer (OR you can just top blueberries after the oatmeal is done)
4. Once the liquid has been fully absorbed, off the fire and you can serve it in a bowl with your desired toppings
(It depends on how you like your oatmeal - if you like them to be a little watery then off the fire before all the liquid has been fully absorbed!)
Ta da~ You have a warm bowl of oatmeal ready for the morning :)
