Healthy Breakfast: Easy Sweet Potato Pancakes

I declare that Sweet Potatoes are officially one of my favourite foods!
I've been paying closer attention to my health over the past year, as I gradually notice the decline of my health. One of the many conditions I have been diagnosed with is the lack of iron in my body, which is critical for our immune functioning, red and white blood cell production etc.
One of the recommended foods is Sweet Potatoes!
Imagine my excitement when the doctor told me to eat more sweet potatoes! I've always loved them but don't consume them enough because I always thought that it'll be so tedious to prepare but boy, am I wrong!
Here is one of my favourite recipes that involve this gorgeous looking food:

Imagine my excitement when the doctor told me to eat more sweet potatoes! I've always loved them but don't consume them enough because I always thought that it'll be so tedious to prepare but boy, am I wrong!
Here is one of my favourite recipes that involve this gorgeous looking food:
Ingredients (for 1 serving):
1. 1 medium sized sweet potato (I love the purple ones from Okinawa but they're so hard to find! In this recipe, I've used the orange ones)
2. 1 egg
3. Optional: 1 teaspoon of baking powder
4. Coconut Oil (or any cooking oil)
Steps:
1. Pop the sweet potato in the oven at 200 degrees for 30 - 45 minutes to soften the flesh (the long thin ones require a shorter time and the short chubby ones need slightly longer)
2. After they're done, take them out from the oven and wait for a few minutes before peeling the skin (be careful because it'll be really hot!)
3. Peel the skin and extract the flesh of the sweet potato
4. Mash them in a big bowl
5. Crack the egg into the same bowl and mix them well (it should feel like pancake batter)
6. Optional: Combine the mixture with the baking powder and mix well (if you want your pancakes to be fluffier)
7. Set your pan to medium heat and pour a little coconut oil onto the pan
8. Once the pan is ready, you can put the mixture onto the pan to create your pancakes (I did mine in smaller sizes so that it's easier to flip but it's up to you to decide ;))
* Remember to flip it after a few minutes till the pancakes are cooked through
And you're done!
* You can serve them with fresh fruits, pure maple syrup or just eat them as it is because they're pretty sweet :)
