Healthy Breakfast: Jackfruit Acai Bowl with Chia Seed Pudding

This recipe packs quite a punch when it comes to its flavour - with the jackfruit sweetness coming through distinctly amidst the acai mix. On top of that, the chia seed pudding provides a good balance to the overall taste!

This recipe packs quite a punch when it comes to its flavour - with the jackfruit sweetness coming through distinctly amidst the acai mix. On top of that, the chia seed pudding provides a good balance to the overall taste!
I'm so craving for this now! But without further ado, let's jump into the recipe:
Ingredients (for 1 serving):
For the smoothie bowl -
1. 1 frozen acai pack (I get mine from Sambazon)
2. 3 small sized jackfruit flesh
3. 1/2 cup blueberries
4. 1/4 cup red grapes
5. 1 medjool dates
6. 1/3 cup almond milk (or any liquid of your choice - options: coconut milk, soy milk, dairy milk, fruit juice)
For the chia seed pudding -
1. 1/8 cup chia seeds
2. 1/2 cup almond milk
3. 1 teaspoon vanilla extract
Steps:
1. Combine all chia seed pudding ingredients in a bowl
2. Stir it well
3. Leave in the refrigerator for 2-3 hours (stirring it periodically to ensure that there's no clumps and that all liquid can be properly absorbed)
4. Combine all smoothie bowl ingredients in a blender
5. Blend well
6. Place chia seed pudding in a bowl
7. Pour the smoothie mix into the same bowl
8. Add desired toppings (I used shredded coconut and cut-up jackfruit)
There you have it - a nice smoothie bowl with chia seed pudding!
