Healthy Snack: Coconut + Peanut Butter Protein Balls

I promised to do a non-smoothie-bowl post and here I am with something slightly different!
I've tried one of these when I was in Bali and felt an instant connection with this unassuming little thing. Packed full of protein (duh~ hence, the name) and overwhelming goodness, protein balls are a great way to curb those hunger pangs!
I'm definitely going to experiment newer flavours and combinations so, I'll keep you posted on my favourite ones in the next few posts/videos!
In any case, let's jump into the recipe!

In any case, let's jump into the recipe!
Ingredients (1 batch - approximately 13 protein balls)
1. 1/4 cup protein powder (I use the Tropeaka Lean Protein in Vanilla)
2. 1/2 shredded coconut (you can further process it if you want it in a smoother consistency)
3. 2 tablespoon chia seeds
4. 1/3 cup peanut butter
5. 2 1/2 tablespoon coconut oil
Optional: 1 tablespoon Tropeaka Immunity Powder
Optional dipping (I didn't do it this time round but definitely doing this for the next batch!):
1. 1/3 cup cacao powder
2. 1 1/2 tablespoon coconut oil
Steps:
1. Combine all ingredients together in a big bowl
2. Stir well to ensure all dry ingredients are fully combined with peanut butter and coconut oil
3. Form dough balls and place them on a plate
4. Refrigerate/freeze them for 30 minutes
5. Optional: Combine dipping ingredients together
6. Optional: Take protein balls out from the refrigerator and dip them in the cacao mix
7. Optional: Place it back in the freezer/refrigerator for 2-3hours
8. Store the protein balls refrigerated before consumption
I really liked this recipe and will probably make more batches again soon! Hope you enjoyed this recipe too!
