Healthy Snack: Chia Seed Pudding with Banana and Jackfruit Blend

There's so many things that you can do with chia seeds; one of which is a chia seed pudding!

This time round, I actually used a fruit that's not as common - Jackfruit!
Not sure why Jackfruit is not often raved about because it's so packed with nutrients that it rivals many 'superfoods' out there!

To get you as excited about this fruit as me, let me list a couple of its benefits here:

1. It is a great immunity booster:

Jackfruits are packed with Vitamin C and antioxidants that can boost your immune system! Antioxidants are also great for our complexion :)

2. It helps with our eyesight:

It contains Vitamin A, which is essential for the health of our eyes (especially now that our eyes are usually glued to the screens of our devices)!

3. It helps with blood formation:

It contains loads of vitamins (example: A, C, E and K) that help with blood formation, which is especially good for those with anaemia (like me)!

Now that you have a glimpse of the amazing benefits of Jackfruit, let's move on to the recipe for this :)

Ingredients (for 2 servings):

For the Chia Seed Pudding:

1. 1/4 cup of chia seeds
2. 1 cup of chocolate almond milk (alternative: unsweetened almond milk, coconut milk, soy milk)
3. 1/4 teaspoon of vanilla extract
4. 3 tablespoon of pure maple syrup (or any other sweetener)

For the Banana and Jackfruit Blend:

1. 1 medium sized banana
2. 2 jackfruit flesh
3. 1/4 cup of almond milk (alternative: unsweetened almond milk, coconut milk, soy milk)

Steps:

1. Combine all ingredients for the Chia Seed Pudding in a large bowl
2. Stir the ingredients well
3. Let it set for about 5 minutes
4. Stir them again
5. Place the mixture in the refrigerator for 3 hours

* Take the mixture out of the refrigerator every 30 minutes to give it a stir

2.5 hours later -

6. Place the Banana and Jackfruit Blend ingredients in the blender
7. Blend them well until it has a smooth consistency
8. Place the blend in the refrigerator for 30 minutes

30 minutes later -

9. Place the Chia Seed Pudding at the bottom of a cup/bowl and pour the blend on top of the pudding

And there you have it!

This recipe definitely takes up some time but it's definitely worth it!
