Healthy Breakfast: Coconut Mocha Overnight Oatmeal

A friend of mine inspired this blog post, for she was commenting about how she has little to no time in the morning to make delectable breakfasts before she rush out the door for work. 
And so, overnight oats are probably the best option for a sumptuous, yet healthy breakfast to kick start the day!

Bringing you one of my favourite recipes for overnight oats - one that not only fill your tummy, but also give you that boost you'd need for a tiring work day
(yeap, because there's COFFEE!)

You can easily opt for non-caffeinated coffee for this recipe :)

Ingredients (for 1 serving):

1. 1 tablespoon cacao powder
2. 1/2 cup coconut milk
3. 1/3 cup rolled oats
4. 1 tablespoon chia seeds
5. 1 tablespoon shredded coconut
6. Dash of cinnamon
7. 2 tablespoon honey
8. 1/3 cup brewed coffee

Steps:

1. Mix all ingredients in a large bowl
2. Give it a stir
3. Leave it overnight (or at least 4-5 hours) for the oats to soak up the liquid

And there you have it! A simple recipe that you can make ahead of time!

You can store is in a mason jar and bring it to work too :)
